Has Summer made a comeback?! The weather here today is windy but the sun is out, and the heat had to be turned OFF!! I remember when I was a child and it used to be so cold on Halloween it even snowed a few years. The wind makes the scents of fall surround you, so for that I am thankful. The fact I had to wear a t-shirt to work with capris, I am not thankful for. October is made to be sweater weather! 🙂
The family has asked to make sure that a lot of my meals are healthy. Well to balance out my weekly meal plans, I have soup one day and salad the next. Usually in that order. Thankfully my new found love for squash of all types and also trying sweet potatoes, I can look for meals with these goods in them. Ricky is off on the weekends for the next month so I don’t have to worry about pleasing him with meals. I have also realized that when I bring home leftovers, he won’t eat them, since he doesn’t care for the meals.
For that reason I feel like a bad wife. So I’m thinking….scary. Maybe make a whole box or two of spaghetti and some sauce, and use my containers for something useful. That way he has meals for the week. I’m sure that would be better than taking tuna fish or lunch meat every day. 🙂
Now for the salad. It really is delicious. I’m not always a fan of nuts in my salads, but this worked well. I put some maple syrup on my chopped peanuts just to sweeten them up.
6 cups chopped romaine lettuce
3 slices center-cut bacon
1 pear, chopped
1 apple, chopped
1/4 cup peanuts, chopped
1/4 cup dried cranberries
1/4 cup crumbled feta cheese
1/4 cup Poppy Seed Salad Dressing (or more or less)
2 Tablespoons balsamic vinegar (or more or less)
- Lay bacon strips down on a folded paper towel on a microwave-safe plate, then cover with another folded paper towel. Microwave for 1 minute then rotate the plate 1/4 turn and microwave for 30 more seconds. Continue rotating and cooking in 30 second increments until the bacon is crisp, then let cool and chop up.
- Add cooled bacon, romaine lettuce, pear, apple, peanuts, dried cranberries, and feta cheese into a very large bowl, then add salad dressing and balsamic vinegar to taste. Toss well then serve immediately.
