Brown Butter Carrots.


I love carrots! Especially the rainbow ones. I know there isn’t much of a difference, if there even is one besides the colors. But they are so much brighter! This was a perfect dish for today. The recipe I used is from Recipe Critic.



  • ¼ cup butter
  • 2 cloves garlic, minced
  • 2lb bag rainbow carrots, sliced
  • 2 cup red onion, chopped
  • pepper
  • Creole Seasoning ( my little additive) to taste
  1. In a medium sized skillet add the butter. Cook over medium heat and whisk the butter until it browns. It will become frothy.
  2. Add the garlic, sliced carrots and red onion. Add pepper and seasoning to taste. Sauté for about 7-9  minutes until they become soft and tender.
