I love carrots! Especially the rainbow ones. I know there isn’t much of a difference, if there even is one besides the colors. But they are so much brighter! This was a perfect dish for today. The recipe I used is from Recipe Critic.
- ¼ cup butter
- 2 cloves garlic, minced
- 2lb bag rainbow carrots, sliced
- 2 cup red onion, chopped
- Creole Seasoning ( my little additive) to taste
- In a medium sized skillet add the butter. Cook over medium heat and whisk the butter until it browns. It will become frothy.
- Add the garlic, sliced carrots and red onion. Add pepper and seasoning to taste. Sauté for about 7-9 minutes until they become soft and tender.
