Hi stranger. Long time no chat. Lets jump back into some grub & stuff. Today’s special is a double feature. Crescent rolls are so easy to incorporate into a meal. Its a side, its a main dish, you can stuff it, flatten it, roll it up. The buttery taste and fluffy texture really hits home. Its basically a comfort “item” on our table. I was a bit nervous about stuffing it with breakfast food. Sometimes the casseroles I made need the eggs to be set, some want them raw. Thankfully these could be cooked almost the whole way, I personally do not like runny, snotty eggs.
This recipe is based on one that Pillsbury had on their site. But if you want something with a little extra try this one from Jo Cooks. At that point in time when this breakfast ring was made, a few months back (has it been that long? ), Ricky had not discovered his love for other foods yet like peppers and Chinese food. Literally 30 years old and he had never even tried some takeout. I felt a little responsible for not forcing him to eat more things, he was a spoiled child. No longer. I’m off track. Sorry.
Preheat oven to 375F.
The steps are easy, Cook your bacon until cooked, not crispy. I cook bacon in the oven at 425 for 10-15 mins. Grab some eggs, about 5-7 , pour in 1/4c of milk. Now whisk, whisk, whisk and cook until set and no longer snotty. Roll out the presents and separate them. Place them in a circle on a large baking pan/sheet. We’ve used a large pizza pan which is best. Place the longer ends together like the photo below. Tips outward.
Place a piece of bacon on each triangle, I found folding them in half or cutting them in half helps a lot. Sprinkle some mexican blend cheese on top of the bacon, and top off with the eggs. Take the point of the crescent roll and bring in it, tucking it under. Unlike myself, try to tuck so there isn’t so much open space. Bake for 20-25 mins. Cut & Enjoy.
Notice the empty pan. Exactly. Its a great breakfast. Plus we had extra bacon which is never ever a problem.
Here is a list of ingredients that I used and directions:
1 package of crescent rolls.
1cup of Mexican Blend Cheese
1/2 pound of bacon. I suggest a whole pound if your like me and have no control around bacon.
Cook bacon until browned but not crispy, cut each piece it half, set aside. Preheat oven 375F. Grab a baking pan, pizza pan, baking sheet. Cut a piece of parchment paper to save on clean up.
Lay out the crescent rolls with the corners overlapping a small amount with the tips facing outward, creating a circle in the middle. Its okay if the tips hang over the edge at this point. Lay a slice of bacon or 2 on each roll, sprinkle cheese over it.
Then take a spoonful or two of eggs and set onto the cheese and bacon. Take the tips and pull them towards the middle, tucking it under to “seal” it. Continue until the roll is complete, bake for 20-25 mins or until golden brown. Enjoy with orange juice, coffee, or tea.
